What is the roll of the Queen of England in Canada and other Commonwealth nations?
I know that her roll is ceremonial, but is she the official head of state in ceremony if not practice?
Does she swear in the new Canadian Prime Minister?
I thought I saw that the political leader in the hosting country of the Olympics breaks the champaign bottle to start the olympics or something. Does the Queen do that for Canada? Anybody know? What else does the Queen do? She is on Canadian coins, right? Anything else?

The Queen is the official Head of State of Canada and other Commonwealth nations such as Australia, New Zealand and the United Kingdom (it is possible for a country to be part of the Commonwealth of Nations but NOT have the Queen as its head of state, e.g. India).
The day to day duties of the Queen in her Commonwealth realms are executed by the Governor-General of that realm, e.g. the Governor-General of Canada would swear in a new Prime Minister.
There is nothing in law to stop the Queen exercising her power as Head of State if she chooses to do so - she has visited Canada in person to sign constitutional changes into law - but her role is ceremonial.
Yes, the reigning monarch always appears on coinage of a Commonwealth Realm. The Queen is mostly involved with running the United Kingdom - which has no Governor-General as it is the realm she resides in - and leaves the day-to-day governing to her Governors-General, Lieutenant Governors and State Governors (for Australia).
It is actually the political leader of the host city of an Olympic Games that visits the previous Game’s closing ceremony - for example, Boris Johnson, the Mayor of London, was present at the closing ceremony of the Beijing Olympics where the Olympics are ‘handed over’ to the next city. The actual opening is usually done by a prominent figure of that country and not the Head of State (e.g. Cathy Freeman rather than the Governor-General of Australia opened the Sydney Olympics in 2000).

It is ceremonial, and she is the official head of state. She opens Parliament, signs laws, appoints people to offices (although only the people selected by the prime minister) and swears them in, and so on.
In the UK, she performs these duties herself. In other countries like Canada and Australia, the governor general does them on her behalf.
